Bryggen is at its most appealing before the crowds arrive, and Baker Brun makes an excellent reason to come early. The Svensgården branch belongs to one of Bergen’s traditional bakery names, yet the pleasure is refreshingly simple: the scent of yeast and cinnamon, good coffee, fresh pastries and filled rolls in the middle of the old wooden wharf. The essential order is a skillingsbolle, Bergen’s soft cinnamon bun, ideally while it is still warm enough to make restraint irrelevant. It is a useful, welcoming address that fits naturally into a morning walk through Bryggen, a rainy pause between museums or a quick breakfast before the harbour wakes up. Take a seat outside when the weather permits; otherwise enjoy the contrast between the cosy interior and Bergen’s famously changeable sky. Come for the cinnamon bun, but keep the address for the everyday generosity of a proper neighbourhood bakery.
