La Côte Saint-Jacques

The famous house-made boudin noir with old-fashioned mousseline, Bresse chicken steamed with Champagne, and the mille-feuille with three light creams are not museum pieces: they are reminders that classic French cuisine can still feel intensely modern when every texture is exact. The dining room opens onto the river, the cellar runs deep, and the service has the rare elegance of knowing when to appear and when to disappear. The five-star hotel deserves equal attention. Its twenty-two rooms and suites are calm, luminous and often open onto the Yonne through a terrace, balcony or bow window.
