Loiseau des Ducs

In Dijon, even the walls seem to have an appetite. Loiseau des Ducs occupies the Hôtel de Talmay, a listed 16th-century mansion facing the Palace of the Dukes. One room is vaulted, another bourgeois with fireplace and wood paneling, a third unmistakably Burgundian with exposed stone and a ceiling à la française. On the terrace, the old city becomes part of the table. Chef Iulian Fistos carries the Bernard Loiseau spirit forward with direct flavors, serious sauces and an unwavering respect for the product. The egg in meurette is more than a regional obligation; mushrooms may arrive with black-garlic béarnaise and vin-jaune cream; wild duck finds blackcurrant in several forms. Even dessert keeps one foot in Dijon, with Mulot & Petitjean gingerbread cream and Flavigny anise ice cream. The Michelin star matters, but so does the clever wine library, which makes excellent Burgundies available by the glass. Historical, elegant, deeply local - and never trapped in nostalgia.
