The road to Ntounias climbs into the foothills of the White Mountains, and by the time you reach Drakona the journey already feels like part of the meal. Stelios Trilyrakis returned to his village to cook with ingredients grown, raised or exchanged close to the farm, using wood fires, a traditional oven and clay vessels instead of modern shortcuts. There may be no reason to study a long menu. Follow what is seasonal and let the kitchen bring its sequence: bread and rusks, mountain greens, farm cheese, potatoes cooked in olive oil, vegetables, pulses and meat that has had time to soften slowly. The pace is deliberately unhurried and service can follow the rhythm of the fire rather than the clock; that is part of the address's honesty, not a flaw to be managed. Come for lunch, reserve ahead and avoid scheduling the next stop too tightly. Ntounias is not simply a rustic restaurant with a view. It is an unusually complete expression of Cretan hospitality, self-sufficiency and the belief that flavour begins long before a dish reaches the table.
