The fritkot is a true Belgian institution. Across Belgium’s 580 municipalities, more than 5,000 chip shops celebrate the country’s most beloved comfort food. Belgian chef Mallory Gabsi first captured French audiences in 2020 on Top Chef. Creative, determined, witty and immensely talented, he quickly became the breakout star of the season. Today, at just thirty years old, he holds a Michelin star for his restaurant on Rue des Acacias in Paris’s 17th arrondissement. Opening a Belgian-style fritkot in Paris almost felt inevitable—as if fries were written into Belgian DNA. The result is a resounding success. The fries are every bit as good as those in Brussels or Liège, and the grey shrimp croquettes are equally authentic. We happily went back once… twice… three times.
