In the 1970s, rue Sainte-Anne saw the arrival of the first Japanese restaurants in Paris. Higuma was among them. Here, no sushi, no sashimi, no chirashi, no yakitori… This is the kingdom of ramen! The most popular dish in Japanese cuisine, though originally of Chinese origin. These noodles, served in a carefully prepared broth—light or rich—come with a variety of toppings (soft-boiled egg, bamboo shoots, pork, chicken, beef, fish, vegetables, seaweed…). Crispy gyoza dumplings and flavorful donburi bowls complete the feast. Portions are generous, prices feel delightfully “so 2000,” and the service is efficient. The décor, however, is practically nonexistent, and it is best to go after 2 p.m. to avoid the queue!
