La Halle aux Grains

In the Bras family, whether in Rodez or in Paris, cuisine is a whole—rooted in an unconditional love for the land and its riches. Michel raised his son Sébastien with a quest for beauty and goodness. There is humility, absolute sincerity, a great deal of hard work, and genius in the dishes served at the Pinault Foundation. By using grains from the Paris region alongside products from their native Aubrac, the Bras have created a menu full of new pairings and unheard-of textures in symbiosis with this cultural venue. One example: roasted pork from Cantal with root vegetables, pearl barley, and a juniper-orange condiment.
