Like everyone else, you’ll feel as though you’ve stepped into a century-old bistro, barely updated with a few industrial light fixtures. And yet, this restaurant only opened in 2021. But what a success in just five years! It’s featured in every guide and highly rated across all review platforms. As a result, people from all over the world are eager to secure their own little “parcel” of a table, drawn by one of the finest wine lists in the city. And above all, everyone comes to indulge: veal head carpaccio with gribiche sauce and capers, a pork terrine with lamb sweetbreads, pistachios, Colonnata lard and preserved lemon, and quite possibly the best potato gnocchi in Paris—especially with sage butter and crispy sage. As for the sweetbreads with brown butter, mashed potatoes and meat jus, it’s simply sublime. Starter / Main / Dessert: around €60–70. No wonder it’s so hard to get a table!
