Vivide offers a single blind tasting menu at €75, served in seven courses, where animal protein is replaced by boundless creativity and a masterful command of seasoning and cooking techniques. It is an unapologetically vegan cuisine, yet in no way militant. Above all, there is no attempt to mimic meat or fish. The smoked butternut squash miso velouté is astonishing, as is the smoked tuberous parsley salad with seaweed gel, balancing heat and briny notes. For dessert, bergamot sorbet beneath a meringue made from pea protein transports diners to another dimension. The décor follows the same philosophy: walls painted with coffee grounds, linen napkins, an open kitchen, and two ovens standing proudly at the center of the dining room.
