For more than twenty years, William Ledeuil’s loft-like restaurant has been a temple of fusion cuisine. Ledeuil is one of the pioneers who helped define what would later become known as “fusion food,” and one of the very few chefs to elevate it to the level of culinary art. At every service, the chef is at the pass, while the kitchen brigade performs with the precision of a finely tuned orchestra. Zucchini blossom with Thai broth, brown shrimp and crab; rabbit from Kervor with curry, peas, lovage, green olives and sobressada; rhubarb with Brocciu sorbet, rhubarb juice, shiso and hibiscus… each dish reveals a remarkable balance of flavors and influences.
