Hidden above street level in a former silver factory, the restaurant combines tiled industrial rooms, an open kitchen and a meat cabinet where cuts are selected and aged with unusual transparency. Porterhouse, club steak and ribeye are the reason to come; ask the server about breed, origin, ageing and portion size before deciding, then share a larger cut so the table can compare texture and doneness. Starters and sides are accomplished, but restraint keeps the meal focused and leaves room for the kitchen's strong desserts. The atmosphere is lively rather than clubby, with a bar that makes waiting for a table enjoyable. Reservations are essential, especially late in the week.
